Nebraska Food for Health Center member Dr. Jacques Izard, Department of Food Science & Technology at UNL, will present, “Food and microbiome proxies for measuring the unmeasurable in large human cohorts,” via Zoom as part of the Food for Health Seminar Series.

Abstract: Some metabolic products from bacteria are not measurable in large human populations. However, these products might be consequential for the wellness of individuals. Some health promotors, like the microbial byproducts of flavonoids, requires expensive analyses when observing a general population. Some disease promotors, like hydrogen sulfide a byproduct of processing dietary sulfurs, cannot be quantified by any methods. We will discuss the use of nutritional and microbiome data to move from clinical studies to large cohort understanding of the relationship food, microbiome and host.
