Complex carbohydrates include the storage polysaccharides (e.g., starch) and structural polysaccharides (e.g., cellulose). Unlike nucleotide polymers (DNA/RNA) and amino acid polymers (proteins), sugar polymers (polysaccharides) are much more complex (more monomers and side chains) in structure and thus require a much larger number of enzymes for their biosynthesis and degradation. Carbohydrate active enzymes (CAZymes) are responsible for the synthesis, degradation, and modification of all the complex carbohydrates in all living organisms.
