Enjoy fun, fellowship, and delicious food & dishes at a series of Cultural Cuisine Nights, happening the first Tuesday of every month from 4:30 to 8 p.m. in Cather Dining Center.

February’s celebration is African & African-American Culture Month.

MENU
Entrees:
• Piri Piri Chicken – roasted chicken quarter with fiery chilies, thyme, and ginger
• Beef Brochettes – grilled beef sirloin marinated with tomato, ginger, garlic, and herbs
• Smoked Shrimp with Okra – smoked shrimp with tomatoes, okra, and ginger fufu (semolina dumpling)
• Peanut Stew with Sweet Potato – roasted sweet potatoes with kale, cumin, and palm oil
• Spinach and Tomato Stew with Smoked Cod Fish – braised spinach with smoked cod, palm oil, and tomatoes

Sides:
• Jollof Rice – red rice pilaf with tomatoes and peas
• Plantain – fried sweet banana
• Roasted Potatoes – roasted potatoes with cumin and pepper
• Braised Greens – braised collards with onions and chili
• Creole Beans – braised beans with tomato, peanuts, an coconut cream

• Peanut Sauce

Dessert:
• Pineapple, Mango, and Banan with Dates

PRICES
- For all students with a Meal Plan, this event is included.
