Happy family is a well-balanced stir-fry dish and loved by many American-Chinese restaurant-goers. When the dish is presented on your table, you will get the idea why it is given such a unique name: beef, pork, chicken white meat, and seafood all in one plate with mixed vegetables. These different kinds of meat bring out a harmonious flavor and make the dish a nutritious and satisfying feast for any holiday family get-together.

Cashew chicken is a favorite dish of prior class participants. This easy-to-make Chinese-American dish combines chicken, cashew nuts, and a thick sauce. Slightly sweet cashew nuts enhance the flavor of delicate white meat; no wonder it is a popular dish in Chinese restaurants. We will add some colorful vegetables, like bell peppers, to make the dish even more appealing.

Both dishes will be demonstrated in the Monday, April 20, class from 6:00 to 7:30 pm at the cooking lab, Room 206, Leverton Hall on the University of Nebraska East Campus. Instructors from the Confucius Institute at UNL will offer step-by-step recipes and instructions. Participants will have the opportunity to have hands-on experience and taste the food made in class.
